Athena, goddess of wisdom and craft, won protectorship of Athens by offering the people an olive tree. (She beat out Poseidon, who offered a salt spring.) The olive was central to Ancient Greece life. All aspects were used — the wood, the fruit, the oil, even the leaves woven into crowns for victor’s heads.

The olive is a beautiful tree, with dusty silver-green leaves and slender, graceful branches. Older olives have a delightfully strong and gnarled appearance, like something from myth themselves.
